Pomegranate, Coconut and Citrus Pancakes

I love pancakes, one of the more superior breakfast options in my opinion.  So when Pancake Day comes around I use it as an excuse to have pancakes any time of the day!  These pomegranate, coconut and citrus pancakes make a scrumptious pudding ANY time of the year.
To start you need to make the batter.  Mix 125g plain flour, I used gluten free, with 2 eggs.  Add 7 tbsp desiccated coconut, the zest of a lemon and a lime (save a little for the garnish) and stir.  Then gradually add the about 200ml milk, you may need less.  

Heat a frying pan on a medium heat with a little bit of oil and then cook a ladle of the pancake mix at a time.  Cook for about 2-3 minutes on each side.

Spoon coconut yoghurt onto the pancakes and sprinkle with pomegranate seeds, citrus zest and a little bit of coconut.
The yoghurt is quite sweet so the batter mix doesn't have any sugar in it.  If it isn't sweet enough for you add a sprinkling of caster or icing sugar.
