Back to Basics: Gluten-Free Vanilla Cupcakes

These gluten free vanilla cupcakes are in my opinion, one of the wonders of the world.  Not only are they delicious, but they are a perfect host for such a wide array of flavour combinations.  I appreciate that they may not look like they have the 'wow' factor, but believe me, to anyone who suffers from a gluten intolerance will appreciate that these are like little pieces of heaven...

I have shared this recipe with you because I will be posting many more vanilla cupcake based tutorials in the future.  It would be a little bit boring if I had to keep on repeating myself too!  I need to thank Phil Vickery for another spectacular gluten free recipe.  You will find that I will often use the basic recipes from his book, Seriously Good Gluten-Free Baking.

Add this recipe to your baking repertoire, because believe me you will use it over and over again.
Preheat the oven to 180 degrees celsius and place 12 cupcake cases into a cupcake pan.

Sift together into a medium bowl 175g plain gluten free flour, 1 1/2 tsp baking powder and 1/2 tsp xanthan gum, then set aside.

Pour 130ml sunflower oil and 130ml semi skimmed milk together in a jug and also set aside.

In a large bowl add 180g caster sugar, 2 medium eggs (at room temperature), 1 tsp vanilla extract and 1 tsp glycerine.  Using an electric whisk, mix together for 4 minutes until the mixture is nice and thick.
Add the dry and wet ingredients to the egg mixture.  Whisk until thoroughly incorporated.  The mixture should be quite thick and gloopy.

Carefully spoon the mixture equally into the cupcake cases then place on the middle shelf of the oven for 15-20 minutes.
