Black Forest Cupcakes (Gluten-Free)

Firstly let me apologise for being absent for this week.  I have been super busy doing things such as going on a hen weekend and staying somewhere without the internet.  Excuses aside, I thought I would try to grovel in the way I only know how, with cake.  This apology comes in the form of Black Forest Cupcakes.  Light chocolate sponge, cherry jam, creamy frosting and juicy cherries.  Have I won you back yet?

What you will need:

For the Cupcakes:
175g Caster Sugar
175g Unsalted butter, softened
1 tsp Vanilla extract
2 Medium eggs
175g Self-raising flour
20g Cocoa powder

For the Topping:
250g Cream cheese
250g Icing sugar, sifted
1 tsp Vanilla extract
300ml Extra thick double cream
Black cherry jam
Can of cherry pie filling
Dark chocolate, grated

Preheat the oven to 200ºC and line a cupcake pan with cases and set aside.  Next, mix together the butter, sugar and vanilla in a bowl until light and creamy.  Gradually add the eggs to the mixture and stir until incorporated.  Sift in the flour and the cocoa and mix again.  Spoon the mixture evenly between the cupcake cases, then place in the centre of the oven for 15-20 mins.  Remove and leave to cool.

In a medium sized bowl, whisk together the cream cheese, vanilla and icing sugar. Gradually add the cream until the mixture becomes thick and forms medium stiff peaks.
Cut out a small well in the top of a cupcake and set aside the removed sponge as you will need this later.  Fill the well with approximately 1 tbsp of black cherry jam.  Add a blob of frosting on top of the jam, then the cut out sponge, then another blob of creamy frosting.
Place one cherry from the cherry pie filling on top, then drizzle some of the syrup from the can on top too. Finish by sprinkling with grated dark chocolate.  Repeat with the remaining 11 cupcakes.
