Healthy Mixed Berry, Coconut and Avocado Pudding

Hello and happy April to you all!  March was an odd one, what with the freezing temperatures and snow.  I'm hoping this month spring will finally appear, my daffodils will have a fighting chance and I might, dare I say it, be able to leave the house without my coat!

I don't know about you, but I am definitely (almost) sick of chocolate from Easter, which is saying a lot.  It was quite the choc-fest.  Whilst I know that many of you love the decadent recipes that I post on here, I feel like I need to add a little bit of variety calorie-wise.  Queue this wonderful little miracle of a pudding, with one special and unexpected ingredient, the avocado.  

I won't say that you can't taste the avocado at all, but what it does provide is a distinct freshness to the pudding.  It creates a thick texture similar to that of yoghurt, but without that heavy feeling that dairy based puddings can leave you with.  It is still creamy mind you, as the richness from the coconut milk doesn't make you feel like you're missing out on anything naughty.  The sweetness comes from the fruit and the agave syrup which is much healthier than the refined sugar packed puddings you can buy.

What you will need:

100g frozen mixed berries
1/2 a ripe medium sized avocado
1 tbsp agave syrup
1/2 a tin of coconut milk

The recipe for this fruit pudding is as simple as this, place all of the ingredients into a blender and blitz until smooth and everything has combined.  Then serve and eat.  Easy!  No excuses for reaching to convenience food for a sugary hit, this is so ridiculously quick to make and so tasty.  I love how it tastes like you're eating something you shouldn't be, yet is actually really good for you.
As well as being healthy, this pudding also has special dietary benefits of being vegan, dairy-free, gluten-free and low GI.  I am definitely going to try this with different fruits as I think it would be especially delicious with peach and pineapple too.
