Cookies and Cream Cupcakes (Gluten-Free)

My second cupcake recipe of the week as promised is decadent cookies and cream.  A classic combination perched on top of a chocolate cupcake base.  The best thing about this cupcake is that it is like having two naughty snacks in one!  

What you will need:

For the Cupcakes:
175g Caster Sugar
175g Unsalted butter, softened
1 tsp Vanilla extract
2 Medium eggs
175g Self-raising flour
20g Cocoa powder

For the Topping:
200g Vegetable shortening
400g Icing sugar
1 tsp vanilla extract
3-6 tbsp milk
2-4 tbsp crumbled cookies

Preheat the oven to 200ºC and line a cupcake pan with cases and set aside.  Next, mix together the butter, sugar and vanilla in a bowl until light and creamy.  Gradually add the eggs to the mixture and stir until incorporated.  Sift in the flour and the cocoa and mix again.  Spoon the mixture evenly between the cupcake cases, then place in the centre of the oven for 15-20 mins.  Remove and leave to cool.

You can make your own cookies for this recipe, or use shop bought.  I made mine using this recipe, only adding a handful of chocolate chips and by reducing the size and cooking time.

In a medium sized bowl, whisk together the shortening and icing sugar.  Add the vanilla and then gradually add the milk until the desired consistency has been achieved.  Add the crumbled cookie crumbs and stir to mix it through.  Using a piping bag, swirl the topping onto the chocolate cupcakes.  Finish by adding a mini cookie to the side of each cupcake.

I hope that this recipe has succeeded in winning you back.  There will be another recipe coming very soon though...The beauty of this recipe is that you can completely mix up the flavours, as you don't have to stick with normal chocolate chip cookies.  You could try ginger biscuits, hobnobs or completely chocolate cookies (just make sure you check if it needs to be gluten-free).
