Eton Mess Ice Cream

I'm going to be honest with you, this recipe happened as a total accident.  Whilst I was making my Eton Mess Cupcakes I ended up with too much icing, strawberries and meringues as I wasn't decorating a whole batch.  I popped the leftovers in the freezer rather than throw them out (or just be a big porker and sit and eat the icing with a spoon) and just hoped for the best.  I didn't use an ice cream maker or even stir the mixture as it was freezing, I just left it.  Well to say I was pleasantly surprised is a complete understatement. This ice cream is one of the most delicious ice creams I've tasted in a long time.  For those who are from the UK and remember them, it tastes like the best Mini Milk you've ever tasted (do they still make them?), only with strawberries and chewy meringue pieces.

To make, head over to this post and follow the instructions for how to make the icing and mini meringues (or you can buy large ones and crumble them up).  Place into a tub suitable for freezing, add chopped up strawberries and mix until the meringue and strawberries are evenly distributed.  Pop a lid on and then put in the freezer.  Once frozen you may have to leave the tub out so it can soften ever so slightly before serving, but only for a few minutes and then you can scoff the lot!

I now want to make all sorts of flavours of ice cream using the base from this recipe.  I could make mango and peach, or chocolate swirl, or caramel and walnuts, or maple and pecans...drool.
