Chocolate and Berry Pudding Pops (Vegan)

So today is the final recipe in Ice Lolly Week and I thought I'd go out with something quite decadent.  However all is not what it seems, as this recipe whilst creamy, chocolatey and ridiculously delicious is...wait for it...healthy! What, really?  Yes, I kid you not.  It is dairy-free, gluten-free, vegan and blumming brilliant.  I know it might seem weird whacking an avocado into an ice lolly, but it works in my berry pudding recipe, so why wouldn't it work in a lolly?  Just work with me on this one.

Serves 4

What you will need:
1 Large Ripe Banana
1 Ripe Avocado
3 tbsp Unsweetened Cocoa Powder
1/2 tsp Vanilla
1-2 tsp Agave Syrup
125ml Almond Milk (soy or another alternative are fine too)
80g Frozen Mixed Berries
10g Dark Chocolate Chips (dairy-free)

Set aside 20g of the frozen mixed berries and the chocolate chips.  Add the rest of the ingredients to a blender (make sure you've peeled and prepared your banana and avocado first...) and blend together until smooth.  You may need to use a rubber spatula to scrape down the sides.

Roughly chop the rest of the frozen berries.  Take the chocolate chips and berry chunks and divide equally between the four ice lolly moulds, then carefully pour the chocolate mixture into each mould.  You may need to push the chocolate mix into the gaps around the berries and chocolate chips as it is quite thick.  I used a chop stick to do this.  You should also gently bang the mould onto your worktop to remove the air bubbles before finally pushing lolly sticks into the middle of each mould about halfway down and then placing into the freezer to set.

As I've stated before (and is probably pretty obvious) I'm not a vegan, but I don't see why vegans and people who can't have dairy have to miss out on a chocolate ice lolly.  As a complete chocoholic and a great consumer of the stuff, I do not in the slightest feel as though I'm missing out with these lollies.  I can most definitely see myself making a lot of these over the summer.
