Mango, Mint, Ginger and Lime Ice Lollies

I am delighted to welcome you to the first Ice Lolly Week post here on The Peppermint Pencil!  I have created an array of different icy treats to get you through the summer, whether you're after a healthy alternative, something a little bit different or something a bit indulgent - I have covered all bases.  Stay tuned!

My first lolly recipe, or popsicle if you're that way inclined, is a deliciously healthy mango one.  It tastes so very much like it should be bad for you, yet no sugar is added whatsoever.

Makes 4 (total capacity approx. 400ml)

What you will need:
280g Fresh Mango
5g Root Ginger (peeled)
12 Mint Leaves
Juice of 1 1/2 Limes
70ml Water

Add your ingredients into a blender and whizz until everything has been mixed together thoroughly.  Take your lolly mould and carefully pour the mixture into the cavities.  I chose to use my own lolly sticks rather than the plastic ones that came provided.  At this point either add your plastic ones or if you choose to use wooden ones, carefully position them halfway down and in the centre of each lolly.

Carefully place in your freezer until they have completely frozen.  Once they are set, gently remove from your moulds and enjoy!

So unbelievably tasty for something so simple.  All the flavours complement each other wonderfully and I especially love the heat that comes from the ginger.  I really can't get enough of these, so much so that sometimes I don't even get around to freezing them!  The mixture makes a very delicious smoothie also.
