Back to Basics: Gluten-Free and Dairy-Free Shortcrust Pastry

Gluten-free pastry is a tricky thing and isn't nearly as predictable and easy to use as its glutenous cousin.  This recipe however, is my go-to recipe for quiches, tarts and some pies.

 I have based this recipe on the Gluten-Free Shortcrust Pastry recipe from Seriously Good Gluten-Free Baking.



What you will need:

225g gluten-free flour (I use Dove's)
1 tsp xanthan Gum
1/2 tsp salt
110g dairy-free margarine (I use Pure Sunflower Spread)
1 medium free-range egg (room temperature)



Place the flour, xanthan gum and salt in a large bowl and mix thoroughly with a wooden spoon.  Add the margarine and rub it into the flour mixture until it resembles breadcrumbs.



Lightly beat the egg in a small bowl and then add to the large bowl.  Stir the mixture with the wooden spoon until it starts coming together.  You may need to add a very small amount of water at this point.  Then use your hands to form it into a dough.



Wrap in cling film and place in the fridge for at least 30 minutes before using.


When it comes to rolling the pastry out, I find that it is easier to roll it on top of cling film as this really helps when placing it into something like a tart case.  You need to remember that it doesn't act the way that normal pastry would and it is a lot more fragile.  Don't feel like you have got it wrong if it breaks when placing it.  The way to fix this is to simply patch it up with other pieces of pastry dough, just ensuring that you don't make it thicker that the rest of the pastry as it will cook unevenly.



This pastry is delicious as it is, however you can flavour it with dried herbs, spices and chilli to suit whatever recipe you are making.
