Rocky Road Bites (Gluten-Free)


When I was little and I'd go shopping with my mom, we'd always have to stop for a cup of tea.  This didn't make any sense to me back then as I had a stupid amounts of energy, but I didn't complain as a cup of tea for mom meant a cake for me and that would invariably be a slice of rocky road.  I more than understand the need for a tea break when shopping now oh too well.  What I would do to have those energy levels again!

Now these Rocky Road Bites are somewhat decadent.  The combination of chocolate coated biscuits, marshmallows, cherries and pistachios are my little take on the classic.

What you will need:
300g dark chocolate
125g unsalted butter
2-3 tbsp agave nectar
180g digestive biscuits (gluten-free)
100g mini marshmallows*
60g dried cherries*
40g pistachios (shelled and unsalted)
5-10g flaked almonds

*When buying the ingredients for this recipe, if it is necessary for it to be gluten-free please make sure that you check the ingredients of the dried cherries and marshmallows as they can sometimes have hidden gluten.

Break up the chocolate into small pieces and place in a heat-proof bowl.  Add the butter and the agave and gently melt over a pan of simmering water.  Whilst the chocolate is melting, place the biscuits in a freezer bag and bash with a rolling pin to break them up into rough pieces and crumbs.  Once melted, remove from the heat and scoop out about a ladle full or so of the chocolate into a separate small bowl and set aside.


To the chocolate mixture in the larger bowl, add the crushed biscuits and stir until completely coated in chocolate.  Add the marshmallows, cherries and pistachios and stir again until completely coated in chocolate.


Pour the mixture into a square 24cm/9in loose bottom tin and smooth over with a spatula to create an even top. Then pour the chocolate from the smaller bowl over the top and again, smooth over.  Sprinkle the flaked almonds over the top.  Place in the fridge for 2 hours or overnight to set.  

I love the colours that you get dotted throughout the sides.  They look as lovely as they taste! I may not have the energy levels that I had as a child, but these chocolatey yummies might just help a little with that.
