Lavender Bellini

Whilst I was in Norfolk I visited Norfolk Lavender, a beautiful attraction which includes lavender meadows, a lavender oil distillery, garden centre and some of the most gorgeous gift shops I've been to in a long time.  I bought some edible lavender and some lavender syrup with the intention to use them in a cocktail recipe.

I do love a bellini especially in the summer when peaches are in season so I can make my own purée.  It's just such a refreshing and simple drink...which is clearly why I felt the need to mess around with it.  Ahem.
Serves 1

What you will need:
25 ml peach schnapps
12 ml lavender syrup
3 tsp peach purée (to make homemade, blitz a peach with a little bit of lemon juice)
Prosecco, chilled
Edible lavender, to garnish (optional)
Pour the peach schnapps and lavender syrup into a champagne glass. 
Add a teaspoon of peach purée at a time, mixing it in as you go.  Finally carefully top up with prosecco.  Finally sprinkle with some edible lavender.  
I used to be skeptical of lavender flavoured things, assuming that it would taste soapy.  I have tried to be a little bit more open-minded and I am so glad that I was!  The lavender brings a light fragrance to this cocktail and is in no way over-powering.  Ultimately, the best thing about this cocktail is that you can kid yourself that it is a portion of fruit.
