Bloody Eyeballs | Halloween Party Food

One of my favourite things about Halloween is that it is the perfect time to make food that looks gross, but is still really yummy.  I especially like making party food that I hope will freak out my guests, yet they'll still want to eat it!  This sort of food is great for a children's Halloween party too.

These eyeballs are an adaptation of a recipe from my book, The Little Book of Creative Cookery, although they originally were a recipe of my mom's.  What is great about this recipe is that it requires very little effort for a great visual payoff, plus they're really moreish.
What you will need:

Tinned lychees
Maltesers, enough to fill each lychee (or to make GF use another type of ball shaped chocolate like Aero Bubbles)
Raspberry jam
Black writing icing

Drain the juice from the lychees.  I like to save it to drink later, or to use in a cocktail.  Then spoon a little bit of jam into each lychee, approximately 1/2 a teaspoon.  Next take your chocolate and carefully push it into the cavity, smearing the jam that gets pushed out with your finger to add to the 'bloody' effect.
Squeeze a little blob of black writing icing into the middle of each of the chocolates to create a pupil.
I hope you'll agree that this is a pretty gruesome party food.  You can see that I decided to place two of the eyeballs I made in a plastic skull to really add to the gross factor.  I did feel like I was being watched...

If you want a healthier version of this recipe, you could always swap the chocolate for fresh blueberries.
