Coconut Chocolate Milkshake Cocktail

I am often partial to a cocktail pudding.  There is something so decadent about having a big, creamy alcoholic drink instead of something more conventional.  Not great for the waistline, but such a great treat every once in a while.

When I think of summer drinks, I think of coconut cocktails.  Usually they come mixed with tropical fruits and topped with mini umbrellas, delicious, but not always satisfying enough if you want something creamy.  In my chocoholic wisdom I decided that I should make a Bounty chocolate bar into something quite a bit more grown-up, by spiking a coconut and chocolate milkshake with sweet coconut rum and topping with lashings of cream.

Makes 2

6 scoops coconut ice cream
200ml coconut milk drink
4 shots (100ml) coconut rum
Chocolate sauce
Squirty cream
Milk chocolate shavings

1.  Put 4 of the scoops of coconut ice cream, the coconut milk and rum into a blender.  Blend until smooth.

2.  Place a scoop of ice cream into the bottom of a milkshake glass and drizzle chocolate sauce around the inside of the glass.

3.  Pour the mixture from the blender on top of the ice cream and top with squirty cream and chocolate shavings.

The only problem with this cocktail is how moreish it is.  It is one of those sneaky cocktails that doesn't necessarily taste overly boozy and then before you know it you're more than a little bit tipsy.  I'm definitely going to be enjoying some of these on warm evenings this summer!
