Strawberry Pimm's Mojito

Pimm's and strawberries for me are the quintessential tastes of a British summer, so when I found that Pimm's had released a version flavoured with strawberries, I knew I had to test it out (you know, for science).

 My two favourite summery cocktails are a classic Pimm's, laden with fresh fruit and another classic, albeit originating a little further south than Blighty, the totally delicious mojito.  It only felt right to combine the two.
serves 1

6-8 strawberries, roughly chopped

1 lime, cut into 4 wedges
3 sprigs of mint, 
2 tsp caster sugar
ice
50ml Strawberry Pimm's
soda water

1.  Add half of the chopped strawberries, mint sprigs and one of the lime wedges to a glass.  Muddle so that the juices are released from the fruit and the oils from the mint.


2.  Add the sugar and remaining lime and muddle again.

3.  Add a few ice cubes and the remaining chopped strawberries, then pour in the Strawberry Pimm's.


4.  Top with soda water and stir.  Garnish with a sprig of mint and a strawberry sliced from the bottom up half way and then slotted on the rim of the glass.

A British take on the mojito which is sweet, tangy and really refreshing; a perfect drink for a warm day.
