Black Forest Pancakes | Gluten-Free and Dairy-Free

The flavours of Black Forest gateau are some of my all time favourites; the delicious combination of sweet cherries, cream and bitter chocolate are the things that dreams are made of (in my opinion of course).  The only downside with this combination of ingredients is that it isn't necessarily the healthiest, so I really wanted to create something lighter.

As Pancake Day is coming up, I thought that it was a prime opportunity to try out a healthy Black Forest pancake recipe.
I chose to use deliciously healthy vanilla coconut yoghurt to replace the cream and was so pleased with the results.  It is creamy without being sickly and doesn't leave you with that heavy feeling afterwards.  

Alcohol-soaked cherries are replaced with fresh, juicy cherries and a little naturally sweetened, no added sugar cherry jam.

The chocolate flavour comes predominantly from cacao and dairy-free chocolate milk, which is made with coconut milk, cacao, date nectar and water.  There is also a little sprinkling of dark chocolate on top, but not too much!
Makes approximately 14 pancakes.


150g plain gluten-free flour
1 tbsp cacao powder
1 1/2 tsp baking powder
1/2 tsp salt
170ml dairy-free chocolate milk (I used this)
2 eggs, separated
1 tbsp maple syrup
1 1/2 tsp coconut oil for frying

250ml dairy-free vanilla coconut yoghurt (I used this)
140g cherry jam (I used this as there is no added sugar)
1 punnet of cherries
Approx. 1/4 of a bar of good quality dark chocolate


1.  Sift the flour, cacao powder, baking powder and salt into a large mixing bowl.  Stir to combine.
2.  Pour the milk into a measuring jug, then add the egg yolks and the maple syrup.  Beat together with a fork until well mixed.
3.  Pour the milk mixture into the dry ingredients a little at a time, stirring as you go.  When you have added it all, whisk together to remove lumps and until thoroughly incorporated.
4.  In a smaller bowl, whisk the egg whites until stiff peaks form.  Then carefully fold the the egg whites into the previous mixture, taking care not to knock the air out.
5.  Heat the coconut oil in a large frying pan on a medium heat.  Pour a ladle-full of the mixture into the pan to make two round pancakes.
6.  Cook for 2-3 minutes on each side, flipping in between.  You'll know when they're ready to flip when bubbles form on the surface.  Repeat to use up all of the mixture.
7.  To serve, layer with a small spoonful of coconut yoghurt, jam and some slices of cherries.  Then using a peeler, shave curls of the dark chocolate on top.
I love pancakes and often make them at the weekend (if you follow me on Instagram, you'll probably already know this), but quite often stick to the same recipe.  I know now that having come up with this recipe, it'll most certainly be the one of choice for brunches to come.

Black forest is my fave cake ever (!!! really i love it so much i don't even) but I'm also lactose intolerant which is a pain so this is just the most perfect thing ever :') if I do make these, I'll be sure to let you know but damn this is pretty much the best CNY news (unrelated but still as it's all about eating anyway)!
